Just a handful of ingredients that you can interchange with whatever you have in the fridge/freezer. Go crazy, it will become one of your families favourites too
YOU WILL NEED
3 cups of cooked rice
2 tablespoons vegetable oil
2 garlic cloves, minced
1 small onion, sliced
200g cooked chicken breast
1 tablespoon kecap manis
2 tablespoons soy sauce
you can add lap cheong sausage, prawns, broccoli, capsicum, peas whatever takes your fancy
OMELETTE MIX
2 eggs
1 teaspoon fish sauce
dash of white pepper
To make the omelette, whisk the eggs, fish sauce and pepper together. Place 1 tablespoon of the oil into the wok and heat until smokey. Pour in the egg mixture and cook for about a minute or until its starting to set or go golden brown. Remove from the wok, slice into strips and set aside.
Place the wok back onto a high heat, add in 1 tablespoon of vegetable oil and stir fry the onions, garlic until fragrant. Add in the cooked chicken and stir fry for a few minutes.
Add in the rice, soy sauce, kecap manis, sugar, and another generous dash of white pepper. Mix well together and stir fry for a few more minutes. Add in the egg and toss well together.
Serve in your favourite bowl, or make as part of a Chinese Banquet. Let me know what you think if you make this.
