INGREDIENTS
1 sweet potato grated
1/2 cauliflower cut finely
1/2 bunch kale cut finely
2 tablespoons chives
3 eggs
2 tablespoons plain flour or rice flour if Gluten Free
pinch of cayenne pepper
salt and pepper to taste
2 tablespoons grated parmesan cheese
METHOD
Preheat your oven to 180C. Line 2 baking trays with baking paper and put aside.
Place all the vegetables into a large bowl and add in the parmesan, salt and pepper, cayenne, plain flour and eggs. Mix really well.
Using a 1/3 cup measure, scoop out onto the lined baking sheets and flatten slightly. Continue with the remaining mixture until all fritters are on the trays.
Bake in the preheated oven for 25 minutes, or until the edges are browned and crispy.
Makes around 8 large fritters or 16 small ones.
