All the best things about a cookie covered in cinnamon sugar – Doughnut Cookies!!!
2 3/4 cups plain flour
2 teaspoons baking powder
1/2 teaspoon salt
250g softened butter
1 1/2 cups caster sugar, plus 2 tablespoons extra for coating the cookies
2 large eggs
2 teaspoons cinnamon
1 teaspoon vanilla
STEP ONE
Preheat the oven to 170C. Sift the flour, baking powder and salt into a large bowl. Put the butter, vanilla and 1 1/2 cups of caster sugar into the bowl of a stand mixer fitted with the paddle attachment. Mix on a medium speed until they are light and fluffy. Mix in the eggs. one at a time until combined. With the mixer on low, add in the flour gradually until the mixture forms a dough.
STEP TWO
Stir the cinnamon and 2 tablespoons of sugar together in a large bowl. Shape the dough into walnut sized balls and roll in the cinnamon sugar mixture until covered. Place on a lined baking sheet roughly 3cm apart.
STEP THREE
Bake the cookies for 13 minutes. Leave to cool on the baking trays for around 10 minutes then transfer to a wire rack. Enjoy with a coffee, glass or milk or make into ice cream sandwiches.
