A recipe that can be made tonight and put in the fridge for tomorrow morning, ready for breakfast with a strong coffee and present opening. A great breakfast for the whole family.
For those who prefer to eat gluten free, you can substitute the oats for quinoa flakes, brown rice flakes or gluten free oats.
This recipe is for 2 serves, but you can double it for 4 serves
INGREDIENTS
1 cup organic oats
1 cup of milk of choice or filtered water
1 tablespoon grated orange zest
1 teaspoon of cinnamon
1/2 teaspoon grated nutmeg
1/2 teaspoon mixed spice
1/4 teaspoon ground cloves
1 teaspoon vanilla extract or paste
1 teaspoon maple syrup
TOPPINGS
2 tablespoons Greek or coconut yoghurt
Whatever Christmas fruit you have on hand – sliced nectarines, peaches, berries, cherries, mango etc
drizzle of honey
A sprinkle of almonds or pistashio nuts
STEP ONE
Soak the oats, spices, maple syrup and the orange zest in the milk or water overnight. Make sure that they are completely covered.
STEP TWO
In the morning, chop up your fruit and place the oats into your favourite bowl and serve with a dollop of the yoghurt, fruit, drizzle of honey and a little extra cinnamon if you desire.
