There are honestly no words to describe these delicious buttery shortbreads. We all look forward to Christmas when mum makes these. I have asked her permission to share her Aunts and she has kindly said yes.

INGREDIENTS
3 oz (90g) caster sugar
9 oz (255g) plain flour, sifted
2 oz (60g) wheatened cornflour, sifted
7 oz (180g) butter
1 teaspoon vanilla extract
extra caster sugar for sprinkling
STEP ONE
Cream the butter, sugar and vanilla in a bowl of an electric mixer.
STEP TWO
Work in sifted flours gently until combined.
STEP THREE
Combine the dough into a ball and divide into 4 quarters. Flatten out into rounds and pinch the edges like your making a pie crust. Lightly score the dough into quarters and prick with a fork. Sprinkle with a little caster sugar.
STEP FOUR
Rest in the fridge for about 30 minutes. Preheat your oven to 150C.
STEP FIVE
Take the shortbreads out of the fridge and bake in the oven for 45- 60 minutes until just golden brown. Once out of the oven cut through the quarter score marks and let them cool completely.
