I love a good salad, especially one with lots of flavour. At least once a week there is a salad for dinner and it always is a hearty one.
This is my version of a healthy Caesar salad, I don’t add a dressing as the ingredients all meld together to create a yummy creamy texture.
Serves 2
- Lettuce of your choosing – I had gem lettuce in the fridge. Just wash and tear
- 1 x Lebanese cucumber sliced
- 1/2 avocado diced
- 5-6 flamed capsicums or roasted capsicums sliced
- 2 cubes merediths Goats cheese
- 2 boiled eggs, sliced
- Chives
- Sliced red onion
- Grated pecorino cheese
Place all into your best looking bowl, arrange to your liking and eat. You can add some chicken or bacon if you wish or keep it vegetarian.
