My Caesar Salad

I love a good salad, especially one with lots of flavour. At least once a week there is a salad for dinner and it always is a hearty one.

This is my version of a healthy Caesar salad, I don’t add a dressing as the ingredients all meld together to create a yummy creamy texture.

Serves 2 

  • Lettuce of your choosing – I had gem lettuce in the fridge. Just wash and tear
  • 1 x Lebanese cucumber sliced
  • 1/2 avocado diced
  • 5-6 flamed capsicums or roasted capsicums sliced
  • 2 cubes merediths Goats cheese
  • 2 boiled eggs, sliced 
  • Chives
  • Sliced red onion
  • Grated pecorino cheese

Place all into your best looking bowl, arrange to your liking and eat.  You can add some chicken or bacon if you wish or keep it vegetarian.
