Porridge is a breakfast staple in our house – whether it is a hot 45 degrees or a blustery winter’s morning, oats are always something that is requested.
The easiest way I have found to make really creamy porridge is to soak the oats overnight.
Place 1 cup of oats into a bowl , cover with enough water so they are submerged. Add in a pinch of salt, vanilla paste and a sprinkle of cinnamon or mixed spice. Cover and leave on the bench until the morning. You can also soak the oats in milk but make sure you put the bowl into the fridge.
In the morning, place the oats into a saucepan with a little milk, almond milk, soy milk or coconut milk and bring to the boil. Once boiling, reduce the heat and simmer, stirring occasionally. Make sure you don’t let the oats stick on the bottom of the pot (should take approximately 10 minutes)
Greek yoghurt, stewed fruit, nuts, seeds, berries, peanut butter, dark chocolate, honey, maple syrup, citrus zest, grated apple, apricots. The choices are endless.
