I have wonderful memories of these delicious buttery biscuits from my childhood they were a treat that my mum would make after we came home from school. I am now making them for my husband and son and they were a huge hit.

Preheat oven to 180
Biscuit Dough
185g softened butter
3/4 cup brown sugar
3/4 cup plain flour
1 1/4 cup self raising flour
1 egg
Vanilla essence
Filling
60g softened butter
1 cup icing sugar
1 teaspoon vanilla
2 teaspoons milk
Raspberry jam
Method
Cream butter, sugar, egg and vanilla together until pale and fluffy.
Slowly mix in the dry ingredients until the dough forms
Spoon 1 teaspoon of mix into a ball and flatten into an oval shape with the back of a spoon
Continue until the tray is full.
Bake for 12 mins until slightly golden.
Let cool on a wire rack.
To make the filling – cream all ingredients together until light and fluffy.
Spoon 1 teaspoon of filling and jam onto each side of the cookie and sandwich together.
