PALEO TANGELO GRANOLA

I have had a lot of open packets of nuts in the pantry and I thought what is the best way to use them up in a delicious way. I have been buying paleo granola at our local foodworks and I regularly make oat granola for my hubby. This recipe makes two trays and keeps for around a few weeks

3 cups of any nuts you like

1/2 cup pepitas and sunflower seeds

1 teaspoon vanilla

1 teaspoon of tangelo zest

1/2 cup cranberries

2 tablespoons maple syrup

1 tablespoon chia seeds

~ preheat oven to 170 degrees

~ combine all dry ingredients into a bowl. Add in the wet ingredients and combine well.

~ place some baking paper onto 2 trays and spread the mix out evenly. Bake in the oven for around 20 minutes or until toasty.

~ leave to cool on the tray. Break into lovely chunks and eat with yoghurt, almond milk or any milk you enjoy 😊
