PUMPKIN SPICE LOAF

this is so very yummy –

Recipe from the winter Coles magazine

1 cup of cooked butternut pumpkin

2 eggs

1/2 cup milk

1/2 cup vegetable oil

2 tsp ground ginger

1 tsp cloves

1 tsp mixed spice

2 cups self raising flour

1 tsp vanilla essence

1 cup caster sugar

1. Preheat oven to 180c

2. Grease and line a loaf tin

3. Combine flour, sugar, spices into a bowl

4. Combine milk, vegetable oil, vanilla, eggs and mix into the dry ingredients. Combine the cooked pumpkin into the batter. Mix lightly until combined.

5. Pour into a loaf tin and bake in oven for 1 hour, or until a skewer inserted comes out clean. Cool in tin for 10 mins

6. Turn onto a wire rack and cool. Serve with butter and honey
