1 cup cooked quinoa
1 zucchini, cut into a dice
1 capsicum, cut into a dice
50g fetta, diced
1/2 bunch of shallots
1 can of black beans, rinsed
1/2 cup cooked corn
1 tablespoon of lemon juice
1 tablespoon of olive oil
1/2 teaspoon of mexican chilli powder
1 bunch of parsley or coriander.
Place all into a bowl and mix together.
